Coconut Bar Cookies

Coconut Bar Cookies 
1/3 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. sifted flour
1/2 tsp. baking powder
1/2 tsp. salt
1 c. flaked coconut
Cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla.Sift together flour, baking powder and salt. Gradually add dry ingredients to creamed mixture, mixing well. Stir in coconut. Spread in greased and floured 8 inch square baking pan.
Bake in 350 degree oven 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on rack. Cut in 2 inch squares. Makes 16 squares.

Diane`s COCONUT COOKIE BARS 
1/2 c. butter
1 1/2 c. light brown sugar
1 1/4 c. flour
1/2 tsp. salt
1 tsp. vanilla
2 eggs
1 c. chopped nuts
1 (2 1/2 oz.) can flaked coconut
Cream butter and sugar. Then add 1 cup flour and eggs and mix well. Add the rest and bake in greased 9x13 inch pan at 375 degrees for 12 minutes.
 
COCONUT BAR COOKIES 
1/2 c. butter
1 c. flour
4 tbsp. confectioners sugar
2 eggs, beaten
1 1/2 c. brown sugar, packed
2 tbsp. flour
1 c. chopped nuts
3/4 c. coconut
1/4 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla
Mix butter, 1 cup flour, and confectioners sugar. Press into pan; bake at 350 degrees for 15 minutes. Mix all remaining ingredients together; spread over top of baked crust, and return to oven. Bake for 20-30 minutes. Cut while hot.
 These being my fave childhood cookies, I have decided to try each one to be certain it is the newspaper clipping my Mum used to make. If you do decide to try these recipes, please do let me know which you like the best!
