Skinny Dipp'n Agave Mustard Cupcake
Something I have been absolutely waiting for from Norwichnuts ... Pure cupcakin genius. Try these you will be amazed.
For Lyns.....so I had a little of this and a little of that and you should know by now I don't do honey.
Recipe makes 12--
1 1/2 cups all purpose flour
3/4 cup agave syrup
2 tbsp favorite mustard
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup plain soygurt
Egg Replacer for 2 eggs
1 teaspoon vanilla extract
Preheat oven to 400 degrees.
Mix dry and wet ingredients separately, then stir just until combined. Line a 12-cup muffin tin with cupcake papers, fill each cup 2/3 full with batter. Bake 15-20 minutes until done---------------------- poke 4 holes on top of each cuppie and fill with a little more agave.
Frosting:
1 cup vegetable shortening
1/2 cup margarine
1 cup agave
5 tbsp. flour
3 tsp vanilla
1 tsp mustard
Dash of salt
Combine and ice cuppies-decorate as you wish.
