What are you making for game day?
Hey everyone! Getting ready for game day can be tricky. I've compiled a few pins, I know some of you are anti pinterest but I love it to book mark come back to recipes. There are about 12 pins I plan on trying and if time permits maybe more, otherwise the local deli is taking over Happy Game Day!

Mayo Cake
Mayonnaise Cake
2 cups flour
1 cup sugar
1 1/2 teaspoon soda
1 1/2 teaspoons baking powder
4 Tablespoons cocoa
Mix together and add:
1 cup cold water
1 cup mayonnaise
2 teaspoons vanilla
Mix and bake for 35 minutes in a 350 degree oven.
Each week I am going to publish a recipe for you to try and give me feedback on how it turned out. This week I put up a frosting and a cake my Gran used to make, I will admit I use 2 extra tbsp of dark cocoa powder to the mayo
The crusting frosting works gorgeous on this if you want a decorated white frosting on chocolate cake with flowers etc. This is what is typically used of you were to order a cake from the bakery here where I live.
Preferably an nice Italian buttercream is the finest frosting but we always don't always have time for that do we?

Crusting Buttercream Frosting/Icing
I stumbled across this recipe online and I love it. Very creamy and makes decorations beautifully. Got best results with the VIVA paper towel method!
Crusting Buttercream Icing (VIVA Method)
Ingredients
- 2 lbs. sifted powdered sugar
1/2 cup or 1 stick butter, softened.
1-1/2 cups solid vegetable shortening
2 tbsp. clear vanilla extract
1/3 cup water for icing cake -OR- 1/4 cup for stiff consistency.
1/4 tsp. almond extract
Instructions
- Cream butter, shortening, and extracts until creamy and smooth. Gradually add powdered sugar and water. Mix thoroughly on medium speed for hand mixers, low speed for stand mixers, until smooth and creamy. Do not overmix or mix on high speed.
- For whiter icing, use butter without dye (health food stores)
- For stiffer icing, use 1/4 cup of water instead of 1/3 cup.
- If you live where it is humid, you can add 1-2 tbsp. meringue powder.
- Let set for 15 minutes before smoothing with a VIVA paper towel.
- Icing can be refrigerated for 2 weeks in an airtight container. Iced cake can sit at room temp. for 2-3 days.
- *Any flowers made with this recipe remain soft enough to be cut with a knife.*
